4 Tablespoons Olive or Seed-based Oil
1 Garlic Clove, minced
1/2 Teaspoon Ground Turmeric
1/4 Teaspoon Red Pepper Flakes
1 Red Bell Pepper, seeded and sliced
1 Onion, peeled and sliced
2 Yellow Squash, thinly sliced
1 Zucchini, thinly sliced
1 Broccoli Head, stemmed and cut into small pieces
1 Cup Mushroom, cleaned and drained thoroughly
1/4 Teaspoon Ground Ginger
Salt to Taste
Add oil to sauté pan along with minced garlic, turmeric, and red pepper flakes and heat on medium for 1 minute. Add all vegetables and ginger and sauté on medium heat for 3-5 minutes then reduce heat, cover, and simmer until vegetables are slightly soft, another 3-5 minutes. Salt to taste and serve. Add this as a side dish to your protein of choice to make this a perfectly balanced meal. Makes 8 Servings.
