Make Spices Count

Blending fresh vegetables with purposeful spices…

1 Onion, peeled and sliced
1 Bell Pepper, sliced
1 Summer Squash or Zucchini, sliced
1 Garlic Clove, minced
1/4 Cup Olive Oil
1/2 Teaspoon Red Pepper Flakes
1/2 Teaspoon Turmeric
1/2 Teaspoon Dried Basil

1 Onion, peeled and sliced

1 Summer Squash or Zucchini, sliced
1 Garlic Clove, minced
1/4 Cup Olive Oil
1/2 Teaspoon Red Pepper Flakes
1/2 Teaspoon Turmeric
1/2 Teaspoon Dried Basil

Sauté oil in a pan with garlic, pepper flakes, and turmeric on medium heat for 1 minute. Add sliced onion, bell pepper, squash, and dried basil and cook on medium heat for 2-3 minutes uncovered. Then cover, lower heat to a simmer, and cook until vegetables are slightly soft, 5-6 minutes. Enjoy as a side dish, put on top of baked chicken or fish, mix with scrambled eggs, or add to a hummus panini.
