Try this recipe to start your day off right…

Breakfast Burrito

1 tsp olive or coconut oil
1 sprouted grain tortilla or coconut wrap
1 egg
¼ cup broccoli florets
⅛ cup spinach
⅛ cup chopped onion
1 slice of avocado
1 sliced tomato or an  ⅛ cup salsa

Melt oil in skillet over medium heat. Add broccoli and onion; sauté until slightly tender, about 2 to 3 minutes. Add spinach, for the last minute. Add egg. Stir until cooked through. Remove from heat. Briefly warm tortilla. Pour egg mixture in the center of the tortilla. Add slice of avocado and tomato or salsa to tortilla.  Serves one.  Double ingredients for two people.
